Исследование проводили in vitro, в работе использовали слюну, желудочный сок, растворы крахмала, казеина, альбумина и гемоглобина. Сделано заключение, что применение крахмально-белковых смесей способствует снижению гидролиза белка желудочным соком, за счет образования крахмально-белковых комплексов препятствующих гидролизу белков, и снижения доступа протеаз желудка к белкам в крахмально-белковом комплексе. Увеличение соотношения крахмала и белка в сторону увеличения крахмала, способствует дополнительному снижению гидролиза белка, что может являться дополнительным снижением доступа протеаз желудка к белкам, помимо препятствия к белкам в крахмально-белковом комплексе. Кроме того амилаза слюны способствует улучшению перевариваемости белков желудочным соком как вследствие уменьшения крахмально-белковых комплексов, так и повышения доступа протеаз к белкам за счет снижения концентрации крахмала в результате переваривания его слюнной амилазой.</p></abstract><trans-abstract xml:lang="en"><p>The effect of salivary amylase on changes in gastric protein hydrolysis was studied. The study was carried out in vitro, saliva, gastric juice, solutions of starch, casein, albumin and hemoglobin were used in the work. It was concluded that the use of starch-protein mixtures helps to reduce protein hydrolysis by gastric juice, due to the formation of starch-protein complexes that prevent protein hydrolysis, and reduce the access of gastric proteases to proteins in the starch-protein complex. An increase in the ratio of starch and protein in the direction of increasing starch contributes to an additional decrease in protein hydrolysis, which may be an additional decrease in the access of gastric proteases to proteins, in addition to an obstacle to proteins in the starch-protein complex.
